Hey, Ma, Look What I Made

A DailyCandy Mother’s Day Recipe

You’ll never be able to capture the creamy nuances of her mac ’n’ cheese. But you just might be able to make mom a Mother’s Day treat that’s as sweet as she is.

Homemade Apple Pudding Cake with Brown Sugar Glaze

Cake:
1 c. packed brown sugar
1 c. granulated sugar
1 ½ c. vegetable oil
3 large eggs
3 c. all-purpose flour
1 t. baking soda
2 t. cinnamon
¼ t. allspice
½ t. salt
5 medium apples (Granny Smith or Golden Delicious), peeled and cut into inch-wide chunks
1 ¼ c. chopped pecans
2 t. vanilla

1. Combine sugars, oil, and eggs.
2. Mix flour, soda, cinnamon, allspice, and salt. Sift over wet mixture.
3. Toss in apples, nuts, and vanilla. Lightly stir.
4. Butter and flour a pan. (A nine-by-thirteen inch pan is recommended, but an angel food or Bundt pan will work, too.)
5. Bake at 375 degrees for 50 minutes to one hour.
6. Cool for at least fifteen minutes.

Glaze:
4 T. unsalted butter
¼ c. granulated sugar
¼ c. light brown sugar
½ c. heavy cream
1 big pinch of salt

1. Melt butter, then mix in all other ingredients.
2. Bring to a boil and simmer for two to three minutes, stirring.

Assemble:
1. Make deep holes all over cake with a wooden pick or thin knife and pour glaze over cake.
2. Serve warm with ice cream or whipped topping.

She’ll love you for it. (No matter what it tastes like.)
