Once upon a time, Drew Baker worked for a big corporation. But he soon realized that the bigwigs cared more about making green than being green.
So he quit — and opened Drew’s Eatery this weekend in Lincoln Square. With recycled tile and fabric, compostable to-go ware, and fluorescent lights (to name a few), the space is as earth friendly as can be.
The food follows suit: Everything is organic. Traders Point Creamery ice cream (plus organic toppings and homemade waffle cones) and baked goods from Sweet Dreams Organic Bakery & Cafe (cakes, cookies, brownies — both vegan and non) are rare finds.
Homemade soups include roasted tomato and peppers and a rotating daily special. For the kid in you, try one of Drew’s 100 percent organic, grass-fed beef hot dogs (and specialties like the Green Dog with spinach, feta, and chicken sausage).
Looks like more of the beginning than the end.
