Get your tongs ready, revolutionaries: chef and French Culinary Institute alum Justin Smolev opens Dressed, an upscale salad cafe, today at Plaza Midtown. You can pile your plate with 60-plus toppings (everything from falafel to Brussels sprouts) and more than 25 dressings (including tzatziki and a particularly tantalizing blueberry-pomegranate vinaigrette).

Feel like you’re just blowin’ in the wind? Order one of the signature salads: Smolev has a slew of faves on the rotating menu.

Design devotees will fawn over the interior: orange Italian pendant lights, bright green Knoll chairs, and white stone countertops.

Other news to eat right up: two daily soup choices from Souper Jenny, oversize desserts like Fruit Loop squares, and a fleet of chipper red scooters for delivery within a mile radius.

And you thought salads were a one-note meal.
