The self-taught chef spent four months developing fusion foodstuffs that blend her mom’s traditional recipes with farm-fresh, low-glycemic ingredients. The easily prepped bites include a samosa-like chickpea and a meaty taro root varietal that placates carnivorous skeptics. The crispy, wheat-wrapped suckers clock in at just 33 to 44 calories each, yet every dumpling is deliciously dense.
