Pie in the Sky

Southern Pies from Petsi Pies

get a piece of the pie!

Why, I do declare, Miss Scarlett. Spring has finally arrived.

At least we think it has somewhere other than here. We may be battling frigid morning temps, but our Southern neighbors are digging out the seersucker and sniffing the season’s first azaleas.

You too can make like a Georgia peach by whipping up an old-fashioned Southern treat from Petsi Pies owner/baker, Renee McLeod.

Buttermilk Pie
Serves 8

Ingredients
2 c. sugar
1 stick butter, room temperature
4 tbsp. flour
3 eggs, slightly beaten
1 c. buttermilk
1½ tsp. vanilla
1 unbaked, 9-inch pie shell

1. Preheat oven to 325°.

2. Cream together sugar, butter, and flour in large bowl. Add eggs, buttermilk, and vanilla.

3. Pour into pie shell and bake for one hour or until knife inserted in center comes out clean.

4. Let cool before serving with a scoop of Southern hospitality.
