James DiSabatino, owner of the newly unveiled Roxy’s Gourmet Grilled Cheese food truck, gifts us an off-menu slider recipe that incorporates his secret weapon (mayo) with a dash of hot sauce for added kick.Sweet Sausage and Goat Cheese Melt SlidersMakes 24Ingredients1 c. pimentos, diced2 lb. sweet goat cheese2 lb. ground Italian sausage1 c. mayonnaise1 loaf hearty sourdough, slicedSriracha hot chili sauce1. In a mixing bowl, combine pimentos and cheese. Stir until semisoft; set aside.2. Crumble sausage in a pan and cook 6-7 minutes; add salt and pepper to taste.3. Spread mayonnaise on one side of each slice of bread (remove crusts if desired). Starting with the mayonnaise side down, griddle on medium heat (about 2 minutes on each side).4. Cut each slice of griddled bread into four. On one slice, spread cheese, add sausage and one or two drops of Sriracha; top with another slice.
