Channel your inner cook at Hugh Amano’s (Uncommon Ground, South Water Kitchen) new underground dining series. The chef-turned-instructor aims to teach you cooking techniques — then feed you the fruits of your labor.

Amano hosts the salons in his Lincoln Square home. Themes are prearranged (pork, seafood, brunch), but menus are created the day of based on fresh market picks. Sample dishes include Bras d’Or oysters, salt cod brandade, bacon semifreddo, and homemade baguettes.

Your job is simple: BYOB and play nice with five food-loving characters. And try not to chew anybody out.
