That’s what the motto for Pump Room at the Public hotel should be. Both officially open today.

Tucked away in Gold Coast north, the quietly luxurious establishment hums with an energy that’s best described as fireplace-meets-MacBook, Euro espresso bar-meets-chess table. It’s cool and inviting, un-Chicago in the very best way.

Executive chef Bradford Phillips (Blackbird, NoMI) executes famed chef Jean-Georges Vongerichten’s (NYC’s Jean Georges and ABC Kitchen) menu. If you’ve been to ABC, you’ll feel right at home. There’s the roast carrot and avocado salad, crab toast, and roasted beets with homemade yogurt. The ciabatta is as addictive as fried chicken with sweet chili glaze.

End the meal with a salted caramel sundae.

And top it off with a suite.
