The Publican has few competitors.
Except, maybe, itself: Publican Quality Meats is now officially open in Fulton Market.
Every day local farmers deliver whole animals. Butchers cut meat to order and dish out friendly suggestions. Pick up schmaltz, smoked ham hocks, whole chickens, and sausages that chef Chris Kuziemko (The Publican) swears by.
A diverse cheese program includes gems like Minnesota’s Shepherd’s Way.
Goods like Flo’s Relish from Maine, Pok Pok drinking vinegars, Jollay Orchards pickled beets and green tomatoes, Almar Orchards apple cider vinegar, Heinz ketchup, California citrus and avocados, marinated Lucques olives, milk, eggs, and butter line the racks. You can taste anything you please.
A full menu (ribollita, albacore muffaletta, pork belly flatbread, citrus salads), draft and bottled beer (pulled from The Publican’s extensive list).
Master bread maker Ehsan Ganji bakes stellar dough fresh every day.
