As Southport Grocery’s new preservationist, she’s tasked with jarring as many seasonal fruits and veggies as possible to live on grocery shelves and play accompanying roles in cafe dishes.
Molnar’s love for canned bounty started with her great grandmother; she learned the technique working under chefs Bruce Sherman (North Pond) and Charlie Trotter. A stint at Tennessee’s famed Blackberry Farm honed her methods — and instilled a love for Southern flavors.
Current small-batch, pectin-free preserves include lemons, kimchi, spiced cherry chutney, habanero jelly, and sauerkraut. Pickled green tomatoes and traditional fermented pickles inspired by childhood meals at New York delis are coming soon.
On the menu, find apricot chutney in the cheese box, preserved lemons on a broccoli peanut salad, and sauerkraut on the pastrami Reuben.
