His legacy is sweeter: The J. Parker opens today at Hotel Lincoln.

The BOKA group’s (Girl & the Goat, Perennial Virant, BOKA) rooftop bar/lounge runs year-round. Through fall, bask outside near the fireplace; come winter, head inside and enjoy the view.

Erin Hayes’s drinks program takes you to Mexico, Cuba, and Spain, to start, and riffs on classics from each (Parker Paloma, mojito, red sangria).

Paul Virant’s (Vie, Perennial Virant) customizable menu lets you do the pairing. Pick your protein (Rushing Waters rainbow trout, Q7 sirloin, semolina crostini), add accoutrements (fried pickles, spicy mayo, giardiniera), and — unless Chef vetoes your selection — bon appetit.

It sets quite the precedent.
