Nearly six years ago, we announced a weekly underground dinner called Bonsoiree.
A few years later, chef Shin Thompson took over, earning the restaurant a Michelin star.
Here, we reveal yet another Bonsoiree transformation: The tiny space reopens tonight, helmed by chefs Beverly Kim (Aria, Top Chef season 9 finalist) and Johnny Clark (Town, Aureole) with wine director Rachael Lowe (The French Laundry, Sixteen); a twelve-course, contemporary Korean prix fixe menu; and a ticketed reservations system.
Start with creamy gougeres flecked with whitefish and miso. Taste (likely for the first time) geoduck with water kimchee, then tuck into aged muscovy duck and foie gras semifreddo with salted plum sauce.
To end, beet and cashew cheese with honey vinegar, and makkoli cake and ice cream. If your wallet allows, splurge on wine pairings (Lowe culls rare pours from around the globe).
The experience will leave you humbled.
