Limited-edition ice cream from a top pastry chef

You’ve never met an ice cream you didn’t like.

Blackbird pastry chef Dana Cree’s just-launched licks are no exception. Each hand-forged pint has a Hello My Name Is sticker, a number (she churns in batches of twelve), and Cree’s signature.

You’ll want to spend a night cozied up with white peach, each bite unearthing layers of flavor — bourbon, butterscotch, Heath crumble, mesquite flour — creating a chocolate Teddy Graham-esque explosion (her words, not ours).

It wouldn’t be wrong to take strawberry-bubblegum on a date to the playground. To create her grown-up, gum-free version, Cree chatted with pal Chris Young, Modernist Cuisine research chef (no biggie), who taught her about bubblegum’s backbone flavors banana, orange, lemon, and vanilla. Cree’s interpretation elicits nostalgia while maintaining a firm foot in the present.

Cherry pit is equally mesmerizing: cherry and apricot pits (their flavor is reminiscent of almonds), egg custard base, chocolate chunks, brownies, and fresh cherries. The chocolate starts to melt the second it hits your palate (Cree despises ice cream with bits of waxy chocolate).

Eventually, she hopes to open an ice cream shop. In the meantime, look for Klug Farm Concord grape sherbet and chocolate chip licorice in the coming weeks.

Talk about a good first impression.
