Saltaus Opens

There once was a great chef named Taus,
Whose cool resto could sure pack the house.
 Rave reviews were the norm,
For his Trotter-trained form.
This was no meek culinary mouse.

One day he thought, I’ll start a joint
Without the whole froufrou price point.
I’ll open a lounge
With more casual grounds
And small plates that won’t disappoint.

Mediterranean meets Asian’s the fare.
(Lots of seasonal ingredients in there.)
Hummus, rack of lamb,
Many treats from Japan,
Plus chocolate baklava with poached pear.

In its own sweet and sleek airy way
Saltaus opens its doors today.
Garden, waterfall,
Huge bar — what a ball!
You’ll go for a drink and then stay.

So go on and head to the West Loop
With your sweetie or a whole big group.
Just don’t gripe to us
If reservations cause a fuss.
