Hotel bars have a mysterious allure.
The unpredictability of the guests. The possibility of a salacious affair. And, of course, the proximity to a room where both can play themselves out.
So, it’s not often that you choose one based on its menu — unless you’re checking out the new Aria Bar in the Fairmont. The unassuming spot has seen a major face-lift that goes beyond the obligatory paint job and revamped cocktails to include a new menu (noodle/sushi bar), new look (private banquettes with curtains, long communal table), and a new chef who spent the past six years manning the kitchen at Mirai Sushi.
The eats include dim sum-like apps (tiger shrimp tempura, lobster spring rolls), noodle dishes (five-spice chicken, soy hanger steak with your choice of udon, soba, ramen, or pho), and, naturally, sushi (nigiri and rolls). All of the daily sashimi specials are chef’s choice, so an air of mystery prevails.
Which sounds just right, given the setting.
