All this bacon is a bellyache in the makin’.
But at Bin 36, curd’s the word.
On February 15, the resto closed its doors to reconceptualize. Now it’s back: newly painted, relit, refurbished floors — and a fresh, inventive menu focused on cheese.
Carefully plucked from wholesalers and small-batch creameries, the huge selection (46 cheeses, to be precise) is cleverly packaged into flights (A Cow, a Sheep, a Goat, and a Buffalo Walk into a Bar).
Chef John Caputo folded the dairy into entrees and sides as well: creamy Gorgonzola polenta, Parmesan cheese puffs with truffle honey, a trio of mini griddled cheese sandwiches (Mimolette, mushroom; three cheese; cheddar, apples, horseradish aioli).
Fear not; the wine’s still there.
