Exercise your right to the 21st amendment at Sable Kitchen & Bar, opening tomorrow in the new Hotel Palomar Chicago.
Relive the postprohibition 1940s with mixologist Mike Ryan’s (Violet Hour) crazy awesome drink program: handcrafted cocktails (Jamaican julep, State Street smash, scotch bonnet), 26 beers, and a 300-bottle library of spirits. Sommelier Emily Wines (that’s her real name) contributes the hefty wine list (65 in all).
Chef Heather Terhune (Atwood Cafe) cooks soul-satisfying small plates like corned beef Reuben strudel, bison short rib sliders, spicy buttermilk fried quail, and sweet creamed corn crème brulee. Crispy brick-oven flatbreads round out the menu.
As for dessert?
Let’s just say it rules.
