In addition to a pristine list of biodynamic wines, sommelier Shebnem Ince (MK, Blackbird, The Gage) and mixologist Clint Rogers crafted a wine cocktail program that’ll knock your nylons off.Start with Ince’s favorite, kir royale, mixed with your choice of liquor (peach, raspberry, or myrtle berry — a dark Italian fruit). Move on to the Henri Presse, a sidecar made with Pineau (a blend of cognac and unfermented grape juice that tastes like caramel and orange). The drinks aren’t insanely strong, so end with Charles Heintz’s small-batch chardonnay (Ince swears by it).
