Remember Naveen Sachar? (He used to teach Indian cooking classes out of his Bucktown home.) These days he has upped the ante with a sparkly new Wicker Park studio, state-of-the-art cooking equipment, and a plethora of new classes and events (bachelorette and holiday parties).

The following recipes are staples in Sachar’s repertoire. Tandoori murgh (pictured) is the base for murgh makhani, his favorite dish to cook for others. We hope you’ll feel the same.

Tandoori Murgh (Chicken Marinated with Spices, Broiled or Grilled)
Serves four

2 lb. of chicken (preferably skinless with bones)
3 tbsp. sour cream
2 tbsp. ginger-garlic paste (can be found at Indian grocers)
1 tsp. salt (to taste)
1 tsp. turmeric
¼-½ tsp. cayenne pepper (to taste)
1 tsp. garam masala
4 tbsp. cooking oil
1/8 tsp. red food coloring

1. Trim fat from chicken. Make a few surface cuts.

2. Combine all ingredients in mixing bowl. Mix well.

3. Marinate mixture 4-12 hours in refrigerator.

4. Cook chicken on grill or under broiler 15-20 minutes or until done, turning occasionally. Serve hot.

Murgh Makhani (Tandoori Chicken in Tomato Cream Sauce)
Serves six

3 14-oz. cans diced or whole peeled tomatoes in tomato juice
4 tbsp. ghee (clarified butter sold at Indian grocers; you may substitute butter, but be careful not to burn it)
1 c. onion, finely chopped
2 tbsp. ginger, minced
2 tbsp. garlic, minced or crushed
1 tsp. salt (to taste)
1 tsp. sugar
1 tsp. turmeric
1 tsp. garam masala
2 tsp. ground coriander
¼-½ tsp. cayenne pepper (to taste)
½ tsp. mint powder
2 lb. cooked tandoori chicken
2-3 jalapeno or green chili peppers (optional)
1 c. heavy whipping cream
2 tbsp. fresh cilantro

1. Puree tomatoes in blender.

2. Heat ghee in pan on medium heat. Add onion, ginger, and garlic. Cook until soft and starts to change color.

3. Add tomato puree. Simmer about 10 minutes, stirring occasionally.

4. Add spices. Continue to simmer about 30 minutes, stirring occasionally.

5. Add chicken (and optional peppers) to pan and simmer about 10 minutes, stirring occasionally.

6. Add whipping cream. Simmer 5-8 minutes until cream is stirred well into the mix. When sauce starts to boil, turn off heat.

7. Garnish with cilantro. Serve hot.
