When chef Todd Stein left Cibo Matto, you entered a mixed state of fear (Is he gone forever?) and rage (How dare he leave me hungry and alone!).
Good news: He’s back in the kitchen at The Florentine, the new JW Marriott’s restaurant, where a white marble-topped bar, spacious lounge, and stately, high-ceilinged dining room set the scene for truly fantastic food.
The menu is an amalgamation of Stein specialties and rustic takes on Italian dishes: chilled lobster cradling buffalo mozzarella and curls of spicy arugula; creamy pumpkin risotto with caramelized bay scallops; earthy, red wine-braised short ribs with addictive ricotta creamed spinach. A pizza oven churns out inventive crusts: sausage, Havarti, cured tomato, and pickled fennel; goat cheese, leeks, smoked bacon, and roasted garlic.
Complementing an impressive, Italian-heavy wine list are cocktails like the Figaro (Old Overholt rye, fig jam, and fresh lemon) and the Italian Hound (Ransom Old Tom Gin, Aperol, and Ruby Red grapefruit juice).
