Dinner in 1906 undoubtedly involved strapping on a petticoat, hailing a buggy, and visiting the butcher.

Dinner in 2011 isn’t much easier — especially if you’re dining at Next, Grant Achatz’s (Alinea) latest venture, opening today.

First, cop yourself an elusive ticket on the website. When you get an email back (sign-ups started last May, so be prepared to wait), jump for joy. Then prep your stomach for a rich, nine-course meal.

The menus, which change every three months, focus on particular times in history. The first is Paris 1906: Escoffier at the Ritz. Esoteric is Achatz’s MO, so expect nontraditional preparations of French cuisine. Think turtle consomme, fillet of sole with crawfish mousse and fried roe, lamb loin, and roast duck with pressed juices to name a few.

We’d say he’s making history.
