If baking is a science, then Aurelie Vacheresse is to the chocolate chip cookie what Einstein was to relativity.
Otherwise known as The Cookie Guru, Vacheresse has discovered the formula for the holy trinity of texture (crispy, chewy, gooey) by using quality, organic ingredients like farmers market eggs, European butter, and Tcho chocolate. And the taste? Sublime enough to tempt any mad scientist out of his lab.
Beginning next week, The Cookie Guru will be doling out her in-demand treats, along with glasses of organic, flavored milk, at The Market at Santa Monica Place. In the meantime, made-to-order batches are available for delivery either fully baked or frozen for future enjoyment.
And that’s an experiment in good taste.
