When we were growing up, the only food rule in our house was finish your dinner.

But the times, they are a-changing. For wisdom and guidance, we turn to Melissa Graham, founder of nonprofit Purple Asparagus and blog Little Locavores. Our latest inquiry: What’s the beef with antibiotics in meat?

Antibiotics are used to prevent disease and promote fast growth to get meat to market sooner. In part, because of the antibiotic abuse by the livestock industry, the medical world has seen the growth of virulent antibiotic-resistant strains of bacteria.

To avoid antibiotics in meat, parents need to search out certain labels. Federal standards prohibit any antibiotic use in the production of meat that is certified organic. If a farm never uses antibiotics while raising its livestock but does not satisfy other standards of organic certification, its products may be labeled “no antibiotic use.” If a producer administers antibiotics only to sick animals, it can label its meat “no routine antibiotic use.”

Beef and Vegetable Kebabs with Mint Chimichurri Sauce
Serves four to six

Ingredients

For the skewers
1 tbsp. tamari
1 tbsp. extra virgin olive oil
1½ tsp. red wine vinegar
1 garlic clove, chopped
1 pinch dried oregano
1½ lb. beef sirloin or bottom round, cut into 1-inch cubes
1 lg. bell pepper, cut into 1-inch squares
1 bunch bulbous spring onions (such as Tropea) or red onion, cut vertically into ½-inch slices

For the mint chimichurri sauce
1½ c. mint leaves
1 med. garlic clove
2 tbsp. extra virgin olive oil
2 tbsp. white vinegar
1 sm. pinch red pepper flakes
½ tsp. kosher salt

1. In a medium bowl, stir together tamari, oil, vinegar, garlic, and oregano.

2. Toss the beef cubes in the marinade. Cover and refrigerate for at least 4 hours (preferably overnight).

3. Thread the skewers by alternating beef, peppers, and onions. When skewering the onions, make sure to thread all the way through the petals.

4. Grill to medium rare, an internal temperature of 125° (about 3 minutes on each side).

5. To make the sauce, puree all ingredients in a food processor or grind to a paste with a pestle and large mortar. Tip: If you’re cooking outside, let kids use the pestle and mortar on your picnic table. They’ll have a great time grinding the ingredients to a paste.

6. Serve sauce alongside kebabs.
