Topping our list: the pelmeni at Brasserie Pushkin, a gilded, trilevel palace from Andrey Dellos (the force behind Moscow’s famed Cafe Pushkin), opening today.

The traditional dumplings, stuffed with pork, beef, and lamb, are as rich as the Midtown oligarchs we expect will be occupying the table next to you. Order them as an appetizer, entree, or bathed in a clear aromatic broth.

We recommend sipping vodka (choose from 22 varieties) to cleanse your palate between every bite of chef Andrey Makhov’s savory pillows.

And because every star needs an entourage, invite the truffly tuna tartare and opulent hazelnut meringue dome to the feast.
