2005: Open customary steak house in Printer’s Row.
2012: Poach Custom House chef de cuisine Zach Millican and pastry chef Erin Mooney. Hatch Eggy’s, a retro-casual diner serving farm-fresh fare (opening today).
Time Line of an Eggy’s Patron
8 a.m.: Coffee. Seasonal French toast (rhubarb), Peter and the Wolf pastrami hash, eggs galore (Tasso ham omelets, green eggs and ham with grits and tomatillo sauce).
Noon: Eggy’s burger (two patties, pastrami, egg, secret sauce), classic salads and sandwiches (beef tongue, hot chili beef dip).
2 p.m.: Egg creams, milk shakes, chocolate sea salt brownies, banana cream pie.
4 p.m.: Zzz.
8 p.m. Three-course prix fixe ($19-$35) starting May 1, including veggie lasagna and fried chicken.
Later this spring: French brasserie Maison opens upstairs.
