If another food truck opens in Seattle, you might just throw yourself in front of it.
Steer clear of traffic and turn right into Rumba Rhum & Food, a new bar in Capitol Hill.
The inspiration is Cuba, 1950s. Owner Travis Rosenthal (Tango), with partner-in-crime Kate Perry, filled the color-washed space with Old Havana details like leaf-shaped ceiling fans and amber wood shelves stocked with vintage accessories. Hard-to-find rum (Agricole, El Dorado, Lemonhart 151) is generously poured at the curved, bilevel bar.
Perry spent weeks researching the spirit in Barbados, Martinique, Antigua, and other chilled-out Caribbean locales before returning to share what she discovered.
Which brings us to: shaved-ice daiquiris, fresh mojitos, baked empanadas (chicken, chorizo, vegetarian), Jamaican jerk pork shank with pineapple slaw, and smoked chicken wings in hibiscus marinade.
After a meal like that, you might need to roll yourself out of the bar.
