Make Chocolate Berry Mud from “I Quit Sugar”

We can get behind any dessert that contains spinach and avocado yet still tastes like chocolate. Try I Quit Sugar author Sarah Wilson’s easy-as-pie recipe for sugar-free mud (a.k.a. pudding). One bite and you won’t miss the white stuff.

I developed this recipe as a dessert. But it’s so nutritious that it makes a great chocolate-satiating 3 p.m. snack, too. Tip: Divide the mixture into small jars and freeze overnight; this makes it easier to tote to the office (no spillage). Allow it to defrost in the fridge during the day, so it becomes a lush slurry by midafternoon.

Chocolate Berry Mud
Serves two

½ c. frozen berries
½ medium, ripe avocado
1 c. baby spinach
¼ c. raw cacao powder
½ tsp. granulated Stevia or Truvia
Pinch of vanilla powder
2 trays ice cubes

1. Mix all ingredients in a blender, preferably a high-powered one. If you’re using a regular blender or an immersion blender, add a little water.

2. Pour into bowls and serve immediately or into jars and freeze.
