Generally speaking, temporary situations require considerable grinning and bearing. (Relocating to Boise; securing loans from the bank of Mom.)
But sometimes, short-term fixes are best.
Like Ad Hoc, Thomas Keller’s impromptu new spot in Yountville. Rather than let the future home of Burgers and Half Bottles (his hotly awaited next project) sit empty whilst he perfected his new concept, he’s been experimenting with the big warm space, serving single four-course menus of homey dishes inspired by his childhood and presented family-style on assorted plates and cazuelas.
Which translates to endive and spinach salad with pomegranates, grapefruit, and walnuts; herb-roasted sirloin with green beans, wild mushrooms, and twice-baked potatoes; chevre with black grapes; and banana upside-down cake and caramel ice cream.
To keep it extra cazsh, wine is served in water glasses, and waiters wear short-sleeve work shirts. Word is he’s having so much fun here, he may keep it open indefinitely.
In the meantime, Ad Hoc will be your new favorite Napa stop.
