Run by the masterminds behind recently closed Jia’s, Republic is also Pan-Asian, this time combining the cuisines of Japan, Thailand, Manchuria, China, and Mongolia.
Chef Evan Packer (Narcisse) switches the menu every few weeks, ensuring his ingredients are fresh and his executions creative. You’ll want to try the green curry purses (potato and veggie curry wrapped in Thai-style wontons), citrus-marinated yellowtail, Kobe filet in Japanese green pepper teriyaki, and signature maki rolls like Hawaii (sticky rice and albacore wrapped in macadamia nuts).
The bi-level restaurant packs a chill vibe with loungey beats and Kung Fu movie projections.
And nary a dissident in sight.
