Never mind the name; the new artisan confections are serious stuff. Pastry chef Katherine Clapner (Stephan Pyles, The Savoy in London) makes the small square bites (round debuts soon) with Venezuelan, Colombian, and African cocoa beans and local goods like Lucky Layla Farms butter and herbs and veg from the farmers’ market.
But the real news is the flavor combos, like Madagascar milk and Jack Daniels or beets and olive oil. Clapner loves her some unexpected ingredients; we’re especially stoked about passion fruit and ginger salt, as well as black currant and Shiner Bock.
They’re, like, totally amazing.
