Just ask Greg Fischer, owner of Chicago’s Wild Blossom Meadery & Winery, who crafts ecofriendly mead from honey harvested via beehives on the city’s rooftops and lakefront.
Varietals include hibiscus, pom nectar, hot apple cin, wild organic mulberry, raspberry peach, blueberry, and coffee. Sweet Desire, his bourbon cask aged mead, has already earned oohs and yums from vintners around the globe.
When it comes to wine, Fischer also thinks outside the barrel, concocting flavor profiles like green apple riesling and chocolate raspberry port.
