Our first thought when thumbing through Michael White’s (of Marea and Ai Fiori fame) new book, Classico e Moderno: Damn. We wish we could do that. Thanks to a how-to from the man himself (in the kitchen at Marea, no less) we’re proud to say we (sort of) can. You can, too.
