Something is brewing in Soho.
Bursting onto the scene tomorrow: Bubbleology — a quirky cafe specialising in Taiwanese tea.
The cold beverage comes in milk or fruit flavours infused with everything from strawberry to passion fruit, honeydew, almond or kumquat (our favourite) and mixed with a handful of tapioca balls. These bubbles of boiled potato starch taste like Gummi Bears and should be sucked through the oversize straw and chewed while you drink.
Drink in or take out from the mad scientist-inspired space filled with gurgling test tubes and a blackboard full of unscientific equations. Bubbleologists in white lab coats (trained under renowned tea masters in Taiwan) are currently working on a recipe for coffee-flavoured and hot bubble teas. Cakes, cookies and design-your-own muffins and crumpets are also available, but we recommend sticking with the tea.
