Thomas Keller’s Greatest Hits Compilation
Track 1: The French Laundry, Yountville
A nine-course gastro-symphony, Keller’s original opus still tops the charts.
Track 2: Per Se, New York
A chorus of foie gras refrains and succulent oyster interludes.
Bonus Track: Bouchon Bakery, Beverly Hills
The highly anticipated bake shop debuts tomorrow next to Keller’s power eatery, Bouchon Bistro. Tucked under the lobby’s grand staircase, its quaint space riffs on a Parisian-style boulangerie (mosaic floors, custom bakery casings, panels by French artist Paulin).
On pastries, chef Roy Shvartzapel keeps the tempo buttery with a fresh array of viennoiserie, breads, and seasonal fruit croissants.
Chef de cuisine Rory Herrmann conducts an orchestra of soups, salads, and sandwiches (the tuna nicoise really sings).
Custom-blended Mill Valley coffee and Kouign-Amman layer cake (Shvartzapel’s specialty) bring things to a rollicking crescendo.
Take your goodies to go or snag a spot on the bistro patio.
Either way, it hits all the right notes.
