The Westside is home to a bevy of bakers and a few candlestick makers. The butchering community, however, has been grossly underrepresented.

Now filling the void is Santa Monica’s newly opened A Cut Above Butcher Shop.

Feast your eyes on behind-the-scenes action in the sprawling open kitchen, where owner Eddy Shin (who earned his chops at Nick & Stef’s Steak House and Primitivo Wine Bistro) preps whole cuts of meat. The nose-to-tail approach ensures optimal freshness and sustainability.

Bring home the bacon, free-range Jidori chicken, grass-fed beef, or house-cured charcuterie from the stacked cold case. Sidle up to the communal table for a taste of the Italian salumi sandwich (provolone, mortadella, coppa, capicola) and pork belly salad (house-made tessa, Manchego, warm bacon vinaigrette).

Then beef up this summer when ACA introduces butchering classes and chef’s dinners prepped by Shin himself. Small-batch wines and craft beers are also in the works.

We’ll drink it by the tubful.
