Even at its crumbly, freezer-burned worst, an ice cream sandwich is still pretty good.
At its best, it’s a Ginger Wipeout. The perfectly proportioned hunk of candied ginger ice cream smushed between molasses spice cookies started it all for Beachy Cream. And now, using family recipes and locally sourced ingredients, Malibu dweller Ann Ryan is whipping up more flavors.
Sugar cookies get loaded with strawberry balsamic swirl ice cream for Strawberry Surfer Girl, while coconut oatmeal cookies are piled high with tart citrus ice cream for Key Lime Cowabunga. Old standards come with a kick, like brownie cookie bases for Surf City Classic Vanilla and spicy Bitchin’ Chocolate Chocolate.
Putting all tastiness aside (if only to wipe the crumbs from a vanilla bean Surfin’ Safari Chocolate Chip snack off our face), it was chewy exterior, toothsome interior delivered from first bite to last — even right out of the freezer — that amazed. We know, it’s a lot to digest.
