You’re going to need everything you’ve got to keep up with Test Kitchen. A permanent new address for foodie pop-ups, the flextaurant switches chefs and mixologists by the day or week.

Tonight, get in on a $40 twelve-course prix fixe menu and $10 cocktails as Jordan Kahn (French Laundry, Per Se) tests soon-to-open Vietnamese concept Red Medicine. Next, Mo-Chica’s Ricardo Zarate will drop by to show off some dishes before turning his attention to the upcoming Anticucho.

Find out what’s cooking on its site or via Twitter. Keep an eye out for John Rivera Sedlar trying out dishes from 26 Latin American cultures that will end up at his new project, R26, which is taking over the old Grace space.

Reservations will be through OpenTable only. Last-minute availability will be tweeted. There are always a few tables reserved for walk-ins — not to mention room at the bar. So tell all your friendsters.
