We’ve been jonesing for another sip of Panther Coffee since we first tasted the independent bean roaster’s brew during Art Basel 2010.
Good news for our caffeine habit: The former pop-up counter operation has settled into permanent digs, complete with state-of-the-art machines and an expert menu that’s more Seattle specialty shop than Cuban cafeteria.
Owners Joel and Leticia Pollock curate their selection from small farms around the world. Using the bean of the season, knowledgeable baristas concoct various coffee drinks (Americano, Clever, cold brew, espresso, French press, vacuum pot) in easy-to-remember cup sizes (small, medium, large).
In the future, the raw and organic loft will host a series of coffee cuppings (similar to wine tastings) highlighting interesting producers.
The downside to all this careful culling: Once a variety is finished, you probably won’t see it again for a while.
So — bean there, done that — try not to get too attached.
