What’s the Diwali, Yo?

Indian New Year Recipe

We know you secretly yearn to be a Bollywood star, so in honor of Diwali, the Indian New Year, cook up a batch of Ishq’s pakoras: They’re sure to have you singing through the hills. For three hours.

Pakoras
Serves four

Ingredients
¼ c. diced onions
¼ c. diced red pepper
8 ears of baby corn, split and diced
2 hearts of artichoke, sliced
1 tsp. cilantro, julienned
½ tsp. minced Serrano pepper
½ tsp. ginger and garlic, minced
Pinch of turmeric
Salt to taste
2/3 c. besan (chickpea flour found in most Indian grocery stores)
¼ c. club soda

1. Put all ingredients except the chick pea flour and club soda in a small mixing bowl.

2. Gently mix in the chickpea flour and finally add the club soda as needed to make a semi-stiff batter.

3. Drop batter by spoonfuls into hot oil. Fry until golden brown.

4. Serve. Celebrate.
