On Getting In
Easy. Bourbon Steak, which opens Thursday, is the first restaurant at The Fairmont Turnberry Isle Resort & Club seating the public.

On Appetizers
Rock (ice cold Maine lobster, spice-poached prawn cocktails, oysters).
Paper (-thin American Kobe beef carpaccio with Thai tomato salad).
Scissors (cut the pretenses with whimsical lobster corn fritters and yuzo crème fraiche).

On Meats
It’s a fiery debate at the wood-burning grill. Beef weighs in forcefully with Masami Farms American Kobe and Japanese A5 Kobe. But butter-poached lobster tail with grilled foie gras or grilled fish (salmon, ahi tuna) counter brilliantly.

On Sides
A coin toss between duck fat fries and truffle mac ’n’ cheese.

On Expectation
Ask the experts: chef/restaurateur Michael Mina (Stripsteak, Las Vegas), executive chef Andrew Rothschild (The Forge), and designer Tony Chi (glittering mirrored walls, glass-enclosed private dining room).
