Attention, Chicken Littles: the sky will not fall if you ditch fingers and fries.
Chef Jonathan Eismann’s children’s menu at Pacific Time offers three- to four-course tastings (grilled salmon, chicken satay, popcorn shrimp, and lobster cocktail) for budding appetites. And this blueberry parfait for dessert.
Blueberry Parfait
Serves 1
Ingredients
¼ c. fresh blueberries
2 oz. fruit juice of your choice
1 tbsp. granulated sugar
2 tbsp. sweetened condensed milk
1 scoop vanilla ice cream or pineapple sorbet
whipped cream
toasted almond slices (optional)
1. In a small saucepan, bring blueberries, fruit juice, and sugar to a boil.
2. Cook two minutes.
3. Place in a bowl and refrigerate until cold.
4. Coat the bottom of a 10-oz. drinking glass with condensed milk, then add ice cream or sorbet. Fill to within an inch of the top with whipped cream.
5. Spoon blueberries over whipped cream and garnish with almond slices.
Eat up, lucky duck.
