Tomorrow, Stephen Starr (of Buddakan and Morimoto fame) opens Steak 954 in Fort Lauderdale’s new W Hotel. DailyCandy got the lowdown from the restaurateur.

Why should we drive north? The best steak in South Florida.

A bold claim. What stands out? Steak-wise it’s the rib eye. Fish, the whole pompano with smoked paprika. Appetizers like king crab and lobster ceviche and foie gras tacos.

We heard rumors of an outdoor garden. It’s like nothing you’ve seen before. Almost feels like you could be somewhere in the South Pacific, overlooking the ocean.

Anything on par with Buddakan’s enormous Buddha? Our designers — they’re French, so they’re always talking about things being sexy — they thought it’d be very sexy to have a fifteen-foot fish tank in the middle of the steakhouse. And the jellyfish look amazing. They’re surreal and ethereal.

Wow us. The $100 cheesesteak. Kobe rib eye, black truffles, Taleggio cheese, and foie gras on beautifully baked bread, served with a split of Perrier-Jouët.

Why not Miami? I’m looking for a space to do Buddakan there.
