Sometimes you celebrate with cheers; others, a popped cork and solid high five.
Tonight, raise the roof at Rosemary’s.
Owner Carlos Suarez (Bobo) named the airy West Village joint after his mother and enlisted his cousin at Dekar Design to decorate tastefully (a kumquat tree at the entrance, potted herbs, and rooftop garden pull double duty). Chef Wade Moises (Eataly, Babbo) isn’t family, but we’re glad Suarez adopted.
Start at the back bar for prosecco on tap. Once seated, opt for salted, rosemary focacce and rounds of vegetable bowls (thyme-flecked radishes, zucchini crudo with tomato).
Fresh pastas (cavatelli with peas and ricotta) prove substantial; we’d share one as a side to prosciutto-wrapped pork tenderloin with fennel, pork-skin crackles, and seedy mustard, or skirt steak with crispy potatoes.
Which is reason enough to party.
