Stealing your dessert thunder: Waltzing Matilda’s, a line of treats inspired by the land Down Under.
After a fruitless search for the traditional Australian and New Zealand pastries she fell for while attending the University of Wollongong, NYC-import Laura Forer began baking them in her Harlem kitchen. She now delivers the made-to-order delicacies citywide.
Start with summery Pavlova (crisp meringue topped with cream and fresh kiwis and strawberries) or chilled vanilla custard sandwiched between layers of puff pastry and passion fruit icing.
Lamingtons, jam-laced white cake cubes dipped in chocolate and coconut flakes, and dense sticky date pudding (pictured) are pleasantly satisfying. Save room for Hedgehog Slices (biscuit-filled brownies) and buttery ANZAC Biscuits (oat cookies).
Most treats come in full and bite-size versions, and Forer is happy to tweak recipes for vegans when possible.
