Dorie Greenspan (James Beard Award-winning cookbook author, mom), Joshua Greenspan (Daniel alum, son), and Daniel Seehoff (collaborator, friend) open Beurre & Sel tomorrow.

Young Greenspan baked for his former coworkers, which made him popular — but not so much as CookieBar, a pop-up he and his mother created in 2010. The duo’s sablés (buttery, salty French shortbread) and chocolate World Peace cookies sold out daily, giving them a good reason to open a permanent sweet spot. (Actually, two: one in Harlem and one on the LES.)

Pick up tubes of mini shortbreads both sweet (mint chocolate, coconut lime) and savory (rosemary parmesan, sesame sea salt), along with streusel-topped jammers (an invention that appeared to Dorie in a dream). Larger single cookies — like caramel blondies — are available to sate grand appetites.
