The old where-to-eat-dinner argument. When presented with options one, two, and three, it’s rarely as simple as do re mi.

Make it as easy as Three Letters. The French joint from longtime buddies chef Pip Freeman (The Grocery), Cam Honsa, and Asa Johnson is now open in Clinton Hill.

Start with mushrooms atop pain au maize (Freeman’s spin on a French cornbread he fell for biking around Aix-en-Provence) and pâté de campagne with slaw (house-made pickles, kale, anchovy mustard). Move on to tender pork bourguignonne with butter-poached mustard greens and toasted kasha.

For those off meat, Freeman draws from vintage cookbooks and his former vegan status for interesting all-veg options (seitan fricassee, beer-battered tofu sandwiches).

Honsa’s beverages — arranged strongest to tamest — include a wintry Rye Devil (Cherry Heering, tarragon) and four tap wines and beers. Find a seat at the bar or in a tufted burgundy banquette and pick your poison.

You’ll see how easy love can be.
