Owner DeeAnna Staats and chef/partner Matthew Dickson (Grace, Rockenwagner) have devised a menu that bids adieu to the bad stuff (butter, sugar, excessive oils) in favor of ingredients like seed proteins, farmers market produce, and lean meats.
Breakfast hits a sweet note with acai fruit bowls (pomegranate pear) and warm grains (quinoa flakes). Lunch and dinner aim to please with a something-for-everyone selection of salads (roasted beets with kumquat vinaigrette), sandwiches, savory grain bowls, and rotisserie dishes (Dickson likes the Scottish salmon).
Belly up to the juice bar for fresh turmeric shots and nutrient-rich concoctions like purple cabbage with beets. For a bigger buzz, swill an organic cocktail by mix master Marcos Tello (The Varnish).
