Since we’ve skipped spring and jumped straight into summer, dive into these picnic-perfect recipes by Almond’s executive chef (and dad) Jason Weiner.
Mango-Banana Tango Parfaits
Serves four
Ingredients
1 very ripe mango (peeled and rough chopped)
2 pints strawberries
2 bananas (peeled and rough chopped)
2 c. full-fat Fage Greek yogurt
1. In a blender, puree each fruit separately.
2. Whip yogurt into soft peaks by hand or using a mixer.
3. Alternate layers of fruit puree and yogurt in four-ounce jars or glasses.
4. Garnish with store-bought vanilla wafers and a sprig of fresh mint.
Elbows and Peas with Cheese
Serves four
Ingredients
1 c. cooked elbow macaroni (or other bite-size pasta)
1/3 c. cooked fresh English peas
1/3 c. crumbled feta cheese
1/3 c. canned chickpeas (strained)
1 tomato (seeded and diced)
2 tbsp. olive oil
1 lemon
1. Gently combine ingredients and top with a squirt of lemon juice.
