Spend nine hours making a bûche de noël only to have little Clumsypants knock it off the counter? Let’s not and say we did.
Keep holiday treats simple with this kid-pleasing recipe from chef/dad Glenn Harris of The Smith restaurant.
Apple Pie Sundaes
Makes two
Ingredients
2 Granny Smith apples (peeled, cored, and cut into thin wedges)
2 tbsp. butter
½ c. sugar
1 tbsp. cream
2 graham crackers
Ice cream of your choice (vanilla works best)
Whipped cream
1. In a nonstick skillet, cook apples with 1 tbsp. butter and ¼ c. sugar until tender. Remove from heat and cool for about 5 minutes.
2. Make a caramel sauce by cooking ¼ c. sugar slowly in a small pot. When the sugar has melted, add the remaining 1 tbsp. of butter and whisk until dissolved. Remove from heat and slowly add cream; continue to whisk until sauce is smooth.
3. Chop the graham crackers into a coarse, sand-like mixture and place in a bowl. Then gently fold the apples, caramel sauce, and graham crackers together.
4. In a tall sundae glass or cup, scoop in the ice cream and apple mixture in alternating layers. Garnish it all with a drizzle of caramel, whipped cream, and more crushed graham crackers.
It’s the sweetest thing.
