We were delighted when Pegu Club bartender Del Pedro struck out on his own to open the unpretentious cocktail den in Prospect Heights. Page through the tome of a menu, or skip straight to the snow cone-like Hobo Julep (Wild Turkey 101, cane syrup, mint bitters, soda) or the spicy-sweet Jala-Pina (pineapple-infused rum, serrano-infused honey syrup, lemon).
